Butter chicken + rice

Kid-friendly, smooth sauce, Greek-yogurt version. Start rice first.

Chicken marinade

  • 1.5–2 lb boneless chicken thighs, bite-size pieces
  • 1/2 cup full-fat Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp garam masala
  • 1 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika, or 1 tsp sweet paprika

Sauce

  • 3 tbsp butter
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced/grated
  • 1 tbsp tomato paste
  • 1 cup smooth tomato sauce/passata
  • 1 tsp garam masala
  • 1/2 tsp cumin, 1/2 tsp turmeric, 1/2 tsp salt
  • 1/2 cup water or broth
  • 1–2 tsp honey or sugar
  • 1/2 cup full-fat Greek yogurt, added off heat

Steps

  1. Marinate chicken if possible, even 10–20 minutes.
  2. Start rice.
  3. Brown/cook chicken in butter, then set aside if crowded.
  4. Cook onion in butter 4–5 minutes; add garlic/ginger 30–60 seconds.
  5. Add tomato paste and spices; cook 1 minute.
  6. Add tomato sauce and water/broth; simmer 5–10 minutes.
  7. Return chicken and simmer until cooked through.
  8. Turn heat low/off; stir in Greek yogurt slowly. Do not boil hard after yogurt.
  9. Balance with honey/sugar, salt, lemon, or butter.

Timing

  • 3:15–3:45: prep components during music-lesson runway.
  • 4:00: Rosie lesson starts.
  • 4:20: rice + butter chicken cooking starts.
  • 5:15: food done / rice resting / table simple.
  • 5:30: eat/rest.

Smoked paprika note: use it lightly so the dish stays creamy/tomato-buttery, not smoky BBQ-curry.
